I have to apologize for my delay the past 6 weeks have been absolutely nuts. We found out the rent on our apartment was going to increase $800 at the end of our lease which meant we had no choice but to find a new place…and quickly.
So the house hunt was on and all my free internet time has been spent searching for houses. We moved into our new house this weekend and I am thrilled to say that it has a to die for kitchen. 6 burner gas stove, sub zero fridge, granite counter tops, and more cabinet space than we know what to do with (ignore the boxes in the picture!). Not the prettiest on the outside, but the inside has been pretty much entirely remodeled. We also got a grill so tonight I decided to test it out with a George’s (favorite Waco eatery) inspired bacon wrapped cheese jalapeno stuffed chicken on a skewer.
- Chicken tenderloins
- 1 Jalapeno (diced)
- Pepper Jack cheese (cut into small cubes)
- Garlic Powder
- Worcester sauce
Take your chicken tenderloins and pound them so they are a little flatter. Then cut them in half. Place the rectangular shaped cube of pepper jack cheese in the middle with a few tiny pieces ofjalapeno. Roll them up and wrap them with a half a slice of bacon (I would recommend getting the thick slices or using the whole slice if it is regular bacon). Then skewer them, but leave a little space in between each one so that the bacon will all get cooked. Sprinkle the Worcester sauce over them then salt, pepper, and garlic powder. Place them on the grill, turning on occasion. I can’t tell you exactly how long to cook them because, I’ll be honest, this is the first time I have ever used a grill and I over cooked mine. They don’t take very long though. Your bacon will be browned and getting charred.
I made some home made buttermilk ranch to go with these and they were awesome. For my Baylor friends, they taste just as good as George’s crazy wings without being deep fried.
